Caputo Americana “00” Flour, high in protein is specifically designated for long maturation of pizza dough, during which the gluten builds a network  strong enough to hold together gases during fermentation and baking, a process that makes pizzas crispy and digestible.

Milled down from a blend of multiple wheat varieties selected on the Italian and European market. Result of a very slow and gentle milling process in favour of protein and starch molecules integrity.
