Tripolina pasta have a curled ribbon shape on one side and they belong to the long curled dried pasta family. Like all the curled edge pastas even Tripolina tipically show a difference of consistency between the smooth and the curled part once cooked. The curled part has also a very important role in holding a major quantity of sauce onto the pasta.
