Apple cider vinegar (ACV) is a type of vinegar made through the fermentation of apple juice. It’s renowned for its distinct tangy flavour, amber colour, and cloudy appearance due to the presence of “the mother”, a combination of yeast and beneficial bacteria formed during fermentation. The process begins by crushing apples and extracting their juice, which is then fermented by adding yeast to convert sugars into alcohol. In a secondary fermentation step, acetic acid bacteria convert the alcohol into acetic acid, giving ACV its characteristic sour taste and strong odour.
